I got this recipe from my friend, Kristen. It varies slightly from her version! Enjoy!
1 lb. ground beef
1/2 sweet onion, diced
1 can vegetarian vegetable soup**
1 can cream of mushroom soup
3/4 can milk
1 pkg. tater tots
1 cup shredded cheese
Brown ground beef and onion. Place in the bottom of 9x13 pan. Mix two soups and milk together. Pour over ground beef. Layer tater tots over soup/milk mixture. Bake at 375 for 50 minutes. Remove pan from oven. Sprinkle cheese evenly over tater tots and bake for an additional 5-10 minutes.
**(if you use the kind of veggie soup that you don't add water to it, you'll need to drain it just a bit, or the soup mixture will be too liquid-y. If you use the soup that needs water added, just add as is -- no water!)

Sunday Roast & Gravy
1 roast (whichever cut/size of beef you prefer)
2 cans cream of mushroom
1/2 cup beef broth
1 envelope dry onion soup mix
salt and pepper to taste
Mix together soup, broth, & dry soup mix. Place roast in crockpot. Sprinkle with salt and pepper. Pour soup mixture over roast. Cover and cook for 8-10 hours on low. Remove roast and cut up. Leave gravy in crockpot to keep warm & serve with mashed potatoes.

Crockpot Burgers

1 egg, beaten
1 cup chopped onion
1/2 cup shredded cheese
2 tbsp. ketchup
2 tbsp. evaporated milk
1/2 cup saltine cracker crumbs
salt & pepper to taste
1 cup flour
2-3 tbsp. oil
2 cans cream of mushroom soup
1/2 cup milk
Mix together ground beef, egg, onion, cheese, ketchup, milk, cracker crumbs, salt & pepper. Form into 8 patties. In a separate shallow bowl, place flour. Dredge patties through flour. Heat oil in a large skillet over medium heat and brown patties. In a bowl, mix together soup and milk. Arrange patties in a crockpot in alternate layers with soup mixture. Cover and cook on high setting for 3-4 hours. Makes 8 servings.

1 can diced tomatoes, undrained
1 8 oz can tomato sauce
1 can corn, undrained
1 can black beans, undrained
1 can manwich
1 pkg. taco seasoning
Brown ground beef and onion in a saucepan; drain. Add remaining ingredients. Stir well and heat through. Garnish each bowl with shredded cheese, sour cream, and fritos, if desired.

Crock Pot Beef Stroganoff
1 1/2 lbs. stew beef
1 large onion, sliced
2 cans cream of mushroom (or cream of chicken...I've used both with the same results)
2 tbsp. catsup
2 tsp. Worcestershire sauce
1 tsp. pepper
1/2 to 1 pint sour cream
12 oz pkg. noodles, cooked
Place beef and onion in the crock pot. Mix soup, catsup, Worcestershire sauce and pepper together. Add to crock pot and mix well. Cook on low setting for 6-8 hours. Just before serving, add sour cream and heat through. Serve over cooked noodles.
